TortiPizza (Pizza Omelette)

Hello my lovely foodies!

How is your week going so far? I hope you are doing great. Me, myself, I’ve been doing some research this week to find new recipes for you and suddenly I remembered about this supereasy and quick recipe that I thought you might find useful so here I am.

I am talking about what I like to call “The TortiPizza” which means Omelette-Pizza and it’s kind of like a healthy and eggy version of a regular pizza. I guess we could put it like that haha. As the saying goes:”one image is worth a thousand worths” so …

It does look kind of like a Pizza right?? Like an eggy pizza at least, doesn’t it.

Anyway, it’s quite worth trying so I am gonna leave the recipe here just in case you wanna give it a go hehe.

Ingredients (3 people):

  • 4 eggs L size
  • A small bag of elvers and prawns
  • A small amount of “ajetes”(young garlics)
  • A bit of cheese
  • A pinch of salt
  • Olive oil

To start off with, you wanna scramble the eggs in a bowl and add a pinch of salt.

While you are doing this, heat up a frying pan with a bit of olive oil and, HERE IT COMES, heat up the oven as well, 180ºC will do.

Firstly, you are gonna saute in the pan the young garlics for 3-4 minutes and then add in the elvers and the prawns and cook them for 1-2 extra minutes. That should be enough.

Once you have all this in the pan, you are going to incorporate the scrambled eggs into the pan but, VERY IMPORTANT, do not stir it up. Just let it spread until it covers the whole surface of the pan.

Then, and this step is optional but I highly recommend it, grate and sprinkle just a small amount of cheese on top right the moment before putting it in the oven.

Leave it in the oven for around 10-15 minutes or until is toasted on top. Just keep watching it every once in a while because every oven is different and it won’t take long until is done.

And that’s it! Quick and easy! Just like that you have a good-looking and healthy TortiPizza in around 20-25 minutes. I mean it’s not as tasty as a real pizza, of course, I am not gonna lie, but it’s far less greasy and caloric and that’s always a plus! I’m sure everyone will enjoy it and even though is not a pizza pizza the slices look kind of similar, don’t they?

Another advantage about this recipe is that you can always go creative switch it around a bit. You can use your favorite products or just put together a  different TortiPizza with whatever it is that you happen to have in the fridge so very useful as well when you don’t know what to do with that leftovers that have been staring at you for days haha.
