Do any of you remember the stuffed tomatoes that I cooked a few months ago? They were absolutely amazing and everyone at home loved them so I decided to keep stuffing things haha and I came up with this brand new recipe. Or at least is brand new for me; I had never had stuffed zucchini before but, OMG! I wish I had done it earlier because they are wonderful! Do you wanna find out how can you do them at home? Ingredients (for 2 people):
- 1/2 red pepper
- 1/2 green pepper
- 1/2 yellow pepper
- 1 carrot
- 1 zucchini
- 100 g. of mushrooms
- Grated cheese
- 1 chicken breast
- olive oil
- garlic powder, black pepper…
The most colorful filling
First of all, we need to get started with the filling. All we need to do is washing up all the vegetables as always and chopping them all up as well. Be careful not to cut the zucchini during this step haha. We need it in one piece haha.
In order to get a well-stuffed zucchinis, we are gonna cut the veggies in small chunks so that they fit perfectly inside the zucchini. Look how nice and colorful they look! Isn’t it beautiful?? And so full of vitamins!
And we’ll do the same with the chicken; the smallest the better, at least in this case haha.
Our veggies are ready for the heat now! Go ahead and pour a bit of olive oil in a big pan because we are gonna cook them all together in it. I’d recommend to incorporate the peppers and the carrot first, then the mushrooms a few minutes later and then the core of the zucchini, which I’m gonna explain you how to get it in the next step of the recipe.
Lastly, add the chicken and let it go brown. That way you’ll now you have your filling ready. Turn off the heat and let it cool down for a few minutes.
Scooping out the zucchini
It might seem pretty obvious but in order to stuff anything you need to scoop its core out first haha. So that’s what we need to do now.
Firstly, grab a big kitchen knife and a cutting board and cut your zucchini in two halves. I then cut them into two smaller pieces so that it would be easier to work with. Just as you can see in the picture bellow.
After that, I changed the knife for a tea spoon and what I did was digging it into the core of the zucchini and scooping it out creating a big hole. The most accurate and close to the skin you get, the more filling you’ll be able to stuff it with. Hopefully, you’ll end up with something similar to this.
As I’ve already told you, I did not throw the core away. I chopped it up and add it to all the veggies in the pan so it goes into the filling as well.
The last thing you need to do with your now empty zucchini is placing it in a baking sheet and adding a bit of salt and olive oil on top because we are gonna bake it on its own for around 10 minutes.
Preheat the oven at 200ºC for 15 minutes previously.
Filling them up!
Take the zucchini out from the oven and, using a spoon, fill them up completely. Don’t be afraid, is gonna fall down anyway when you are eating them so be generous.
Sprinkle a little bit (or maybe not that little) of grated cheese on top and put them back in the oven until the cheese is completely melted and grilled. It won’t take long; 15 minutes aproximately and it’s done! Easy right? And look how appetising it looks!
I promise you guys it was incredibly delicious! I would have been able to eat more if I had had it so be careful haha but I absolutely recommend you to try this at home because it is quite easy to do and you’ll be very happy with the result. You’ll enjoy your food! And that’s what is all about!
