Light but creamy pasta before Christmas

Hello hello everyone! Or should I say Oh Oh Oh!! haha yes yes, Christmas is almost here! And t with it these endless meals full of unnecessarily sugary and caloric food which will make our stomachs feel a little bit less flat haha. Isn’t that true? However, everyone enjoys these gigantic full dishes which we probablyy shouldn’t be eating so let’s get ready for it with a recipe a bit lower in calories.


I guess we could say this is a light and a bit different version of the traditionally Italian recipe “pasta alla carbonara”. Although this dish usually comes with bacon, cream and a lot of cheese, I’m gonna give you an equally delicious recipe that will make you smile. Keep reading and you’ll see!

Ingredients (3 people/tupperwares):

  • 200-300 g. of pasta
  • 1 chicken breast
  • 1/2 onion
  • 1 can of cooked mushrooms
  • 1 full glass of milk
  • 1 full spoon of flour
  • 1 hand full of grated cheese
  • 1/2 bag of kale aprox.
  • Olive oil
  • Salt
  • Ground peper
  • Garlic powder

Chop, fry, repeat

Almost every recipe of mine starts the same way: wash, chop, cook and mix. So that’s what we are gonna do, chop your onion, your chicken and heat up your olive oil in your maxi-pan.

Start by adding the onion, then the chicken and when the latter is browny, add up the mushrooms and the kale, which will lose all its water quickly. So so simple so far!

Secret key to success

Here it comes, the best-kept secret to the creaminess without cream of this carbonara pasta. First thing you gonna do is adding to your pan a full spoon of flour to your pan and toast it for 5 minutes.


Once it’s ready, you gotta follow the second step to this “fake cream” and it’s pouring a full glass of milk over your mix and stirring until it starts to turning into a kind cream-bechamel that will start smelling like heaven. 

Be patient and keep stirring for a few minutes because otherwise it could end up being too thick.

Mix it all and that’s it!

Last thing you need to do, obviously, it’s incorporating your pasta (previously boiled) to your maxi-pan and once again, stirring for another 5 minutes so that all the flavors can mix up and the dish can come up delicious!!


As you can probably tell by now, it’s a pretty easy and quick recipe that will help you hit a little bit lighter before the heavier meals of the year.


As you can imagine as well, I did not eat everything on this huge pan so I put together these full tupperwares for the week. As I always do, you know! But you can also share it with some one, of course!
